Appetizers are always an exciting small snack to have before a meal. Stated in the cook book it says, "Often they can provide the spark that encourages people to talk and interact, breaking the ice of unfamiliarity. They can wake up your guests' appetites, too. Or, they can simply provide a savory companion to that glass of wine or other beverages that begins a celebration" (Clem & Northern 14). A small snack, like guacamole, can start off a meal with an amazement of flavors.

Avocados are the type of food that need to be absolutely perfect in order to get the right color and texture for a meal such as guacamole.  "If an avocado is too ripe, your guacamole will have no texture, while if it is too firm, it will have no flavor" (Rossetti 31). Therefore, the avocados should be perfectly ripe. To start off making the guacamole, you must first dice the avocados into a ball and mash them together so that all of the chunks will be mixed. Next, you add the rest of the ingredients such as, tomato, onion, garlic, jalapeno chile, lime juice, cilantro, sour cream, Tabasco, salt, and pepper. Once all of the ingredients are in, mix the guacamole until everything is evenly combined. You don't want the avocados inside the guacamole to turn brown, so you must serve it immediately or up to about 4 hours. If you would like to refrigerate the guac, "cover with plastic wrap, pressing the wrap tight against the surface of the dip to force out all of the air" (Clem & Northern).

After trying to perfect this dish, I learned that, as I've already stated, that the avocados must be ripe. But the avocados I used were slightly brown and mushy so it didn't create the texture for the guacamole that I wanted. But sometimes, you need things to be absolutely perfect or else something may go wrong. What things in your life need to be perfect in order for things to go right?
