Risotto. A simple yet elegant dish, featured in many high
end Italian restaurants, and in cooking shows across the globe. It's an Italian
staple, that is extremely customizable and easy to make. The base of the recipe
remains the same, no matter what you decide to put into it. My personal favourite
is a bacon, smoked sausage, and corn Risotto. It is a little heavy on the salt,
but I can’t say no to smoked sausage AND bacon, it’s just not possible.
Now this is just the absolute best dish to have late at night, or if your just feeling puckish. And the best part is how easy it is to make, and I know from personal experience, is that when your in high school, the best food comes quick and easy. What do you think. Does this look good? Ingredients:
-2/3 cup Arborio rice
-4 rashers bacon, chopped
-3/4 cup rice
-1/4 cup white wine
-2 cups stock
-Salt & Pepper
-3/4 cups peas (frozen)
-1/4 cup grated parmesan
Directions:
Step 1) Medium- high heat, sauté bacon until fat begins to render, and bacon starts to get crispy. Remove.
Step 2) Add 1 tbsp. olive oil, lower temp to medium. Add rice, stir for 2-3 mins. making sure rice is coated w/ oil.
Step 3) Add 1/2 cup of stock. stir continuously until liquid is almost absorbed.
Step 4) Add 1/4 cup wine if desired.
Step 5) Keep adding stock, 1/2 cup at a time.
Step 6) Add back in bacon + frozen.
Step 7) Stir in parmesan until melted.
Step 8) Adjust seasonings to taste.
Step 9) Enjoy!

This looks amazing, I would probably put the same things that you did because it seems like it would be very flavorful. Could this be a good meal for lunch also? since you said it would be great for dinner.
